Lemon Pepper Chicken Thighs Recipe

Ingredients

4 Grassfed Cattle Co. Chicken Thighs (1.5-2 lbs total)

1 clove garlic, minced

1 tsp lemon pepper

1/4 tsp pepper

1/8 tsp crushed red pepper

1/2 tsp onion powder

1 tsp dried parsley

2 tbsp lemon juice (or juice from half a lemon)

3 tbsp melted pastured butter

Directions

  1. Preheat oven to 400.

  2. Combine all marinade ingredients and stir.

  3. Coat chicken thighs in marinade, including under the skin. Place chicken thighs skin up in a baking dish and pour any remaining marinade over skins.

  4. Bake for 40 minutes. Broil for an additional 5 minutes or until the skins are crispy. We also check the internal temperature of chicken is at least 165 F and let it rest for a few minutes after cooking.
