Back to School Recipes

A quick list of seven favorite recipes from farmer Valerie Luhman.

I know the school year and fall activities are ramping up and it can be difficult to put nourishing food on your table if you have a busy family. Maybe you simply need a few fresh dinner ideas! We hope these suggestions bring a little creativity to meal times together.

Chuck Roast Stroganoff by Or Whatever You Do

I make this in our dutch oven and it’s always a hit. I use about half the amount of noodles the recipe lists. And as a bonus, the leftovers are almost better than eating it the first day! We use Grassfed Cattle Co. Chuck Roasts or Rump Roasts.

Beef & Veggie Bowls with Comeback Sauce by The Whole Cook

My aunt shared this recipe with me after her teenagers loved it! So tasty and very versatile. It’s always fun to find new ways to use Grassfed Cattle Co. Ground Beef.

Balsamic Marinated Flank Steak by Food and Wine

We love pairing flank steak with rice made with our homemade chicken broth and grilled or sauteed veggies. We typically don’t have flank steaks for sale individually, but they’re always included in our Half Beef Share and you can request one in your Quarter Beef Share or Eighth Beef Share as well.

Spatchcock Whole Chicken by Grassfed Cattle Co.

A handful of customers have told me cooking a whole chicken is a bit daunting. If you agree, this recipe is a great place to start! We love making this recipe with our Grassfed Cattle Co. Whole Chickens when we have friends and family over because it always turns out delicious every time.

Hearty Chicken Orzo by Grassfed Cattle Co.

Speaking of whole chickens… If you have leftover chicken, cut it up, put it in the refrigerator or freezer, and try this recipe! As a new mom, Chicken Orzo has become a staple. Our toddler loves it and it’s filled with great ingredients, including our homemade chicken broth.

CLASSIC Beef Stew by Spend with Pennies

A customer sent us this recipe and it has become a staple when the weather is cool and we want something hearty and warm. It’s the perfect way to use Grassfed Cattle Co. Beef Stew meat.

One Skillet Copycat Hamburger Helper by Raising Generation Nourished

Another unique, healthy way to use Grassfed Cattle Co. Ground Beef. This recipe has lots of flexibility and is loaded with vegetables. I like to use what I have on hand or what’s in season from my garden. This recipe is gluten, dairy, egg, nut, and sugar free.
